Cumin Spicy Noodles w/ Chicken — Healthy(ish) Version of Xian Noodles

Cumin Noodles Recipe — A Calorie Conscious Take on a Classic Favorite

There’s nothing that hits the spot more than these delicious spicy chicken cumin noodles! Inspired by the famous Xian noodles, I modified their recipe to be “Fitsian” friendly so I can enjoy this on the weekdays too without breaking my calorie budget.

How to Make Cumin Spicy Noodles Lower Calorie via the Fitsian Method

  1. Portion controlling high calorie ingredients. For example, I use exactly 1 serving of noodles at 190 calories.
  2. Swapping out the meat to be lean meat (chicken thigh).
  3. Swapping out oil for cooking spray, and portioning high calorie ingredients such as Shaoxing wine and chili oil crisp.

Some people prefer to make their own hand pulled noodles but for the sake of accurate nutrition tracking and time, I bought pre-made ones from my local Chinese supermarket.

Tips & Tricks for the Cumin Noodles Recipe

Don’t have or want to use Shaoxing wine?

Shaoxing wine can be picked up from your local asian grocery store or ordered online via Amazon. If you’d prefer not to use it, feel free to substitute with soy sauce.

What if I can’t find wide noodles?

These noodles can be found at your local Chinese grocery store. If you’re not having much luck, Udon, egg noodles, ramen noodles, or any other noodles would work just fine.

Can I make this recipe with other protein?

Yes — traditionally this recipe is made with lamb. I chose to make it with chicken because I wanted to use a lean meat and provide a healthier alternative. You can use lamb, beef, or mushrooms if you’d like a veggie option.

Ingredients for Cumin Chicken Noodles

Chicken, Marinade & Spice Mix

  • 4 oz Chicken thigh, boneless skinless
  • 2 teaspoon cumin seeds
  • 2 teaspoon sichuan peppercorn
  • 1 teaspoon coriander seeds
  • 2 teaspoon Shaoxing wine
  • Salt & Pepper

Stir Fry Sauce

  • 1 tbsp Soy sauce
  • 1 tbsp Dark Soy sauce
  • 1 tbsp Chinkiang vinegar
  • 1 tbsp Lao Gan Ma or Chili Oil of choice

Stir Fry & Noodles

  • 1 serving of Wide Noodles (~55g)
  • 2 cloves Garlic
  • 1 tsp Ginger
  • ¼ Red Onion
  • 1-2 Thai chilis
  • ¼ cup Cilantro, chopped
Setting up ingredients for Cumin Chicken Noodles

Putting Together the Cumin Chicken Noodles

  1. Crush the peppercorns, coriander, and cumin and mix together thoroughly.
  2. Cut chicken into bite size pieces. Mix with Shaoxing wine, salt and about a third of the spice mixture. Set aside for about 15 minutes.
  3. In a separate bowl, combine the chili oil, vinegar, and 2 soy sauces.
  4. In a separate pot, prepare the noodles for stir frying according to the package directions.
  5. Spray a skillet with cooking spray and add in chicken pieces in a single layer.
  6. While the chicken is cooking, saute the garlic, onions, thai chilis, and ginger. Turn the chicken over to the other side and continue cooking (about 2-4 minutes per side).
  7. Mix in the spice mixture, then pour in the stir fry sauce mixture. Then toss in the noodles and mix thoroughly.
  8. Garnish with cilantro and serve!
