Dakdoritang Chicken Noodles

A new spin on a Dakdoritang, which is traditionally a stewed Chicken dish, Dakdori Chicken Noodles captures the same flavor from the classic favorite in dry noodle form with a calorie conscious, protein forward twist.

Ingredients

  • ½ Serving Green tea noodles (Or noodles of choice)
  • 4 oz Chicken thigh (Boneless, skinless)
  • 1-2 Mushrooms (Enoki, Baby Bella, or any)
  • 1 Carrot (Sliced)
  • 1 tablespoon Doenjang
  • 1 tablespoon Gochujang
  • 1 tablespoon Soy sauce
  • 1 tablespoon Mirin
  • 2 cloves Garlic
  • ¼ Onion (Chopped)
  • Scallions and furikake (For garnish)

Instructions

  • Cut the chicken into bit size pieces and mix with all the ingredients (except for the green tea noodles). Marinate for at least 30 minutes to overnight.
  • Prepare poached egg. I did this via the sous vide method — check out this article to see How to Make the Perfect Sous Vide Poached Eggs .
  • Cook noodles according to instructions on package and set aside.
  • Using a cast iron grill, cook the chicken mixture until done, about 3-4 minutes each side.
  • Top green tea noodles with chicken and poached egg and enjoy!
