Ingredients

Curry Spice Mixture

  • 1 teaspoon S&B Curry powder
  • 1 teaspoon Turmeric

Chicken & Marinade

  • 4 oz Chicken thigh (Boneless, skinless)
  • Salt & Pepper

Noodles & Stir Fry

  • 1 serving Egg noodles
  • 1 clove Garlic
  • Onion (Minced)
  • 1 Carrot (Sliced)
  • 2 teaspoon Oyster sauce
  • ¼ cup Chicken stock
  • Green onion (For garnish)

Instructions

  • Prepare the chicken – Cut the chicken into bite size pieces and mix together with the marinade ingredients. Set aside for about 5-15 minutes.
  • Make the curry mix – In the meantime, begin to prepare the curry mix by assembling and mixing the ingredients in a bowl.
  • Cook the noodles – Portion your noodles and cook them according to the package directions.
  • Cook the chicken – Add in the chicken pieces in a single layer and cook the chicken pieces for about 3-4 minutes on each side.
  • Sauté the aromatics – Sauté minced garlic, onion, mushrooms, and carrots. Once the vegetables have begun to soften, about 3-4 minutes, add in the spice mixture and chicken broth. Bring to a soft simmer.
  • Add the noodles – Add in the noodles and mix thoroughly.
  • Garnish and serve – Remove from heat, top with scallions, and enjoy!

Notes

Substitutions and Variations
Use other noodles – Udon noodles, rice stick noodles, or even green tea noodles would be amazing with this recipe. A side of rice would also work well.
Switch up the protein – Shrimp, lean beef, or chicken breast would also pair well with these noodles.
Expert Tips
Deglaze with broth or water – If the sauce seems to get too dry, deglaze with chicken broth or water and stir thoroughly.
Cook the carrots thoroughly – Test the carrots doneness by pushing it with a fork to see if it gives. Continue to let simmer if it doesn't push through a little.
