Prepare the ingredients – Mince the garlic and ginger into small pieces for sauteing. Cut the chives and green onions into small pieces.
Prepare the chicken – Get the chicken and add salt. Mix thoroughly with your hand.
Prepare the poached egg – Start the sous vide if using or prepare the poached egg using your preferred method.
Cook the chicken and aromatics – Turn the heat to medium to warm the pan. Add the sesame oil to the pan and add in the ground chicken, flattened into a single layer. Cook for about 2-3 minutes. Then flip over and cook the other side, breaking the ground chicken up into pieces. Add the garlic and ginger into the sesame oil chicken mixture and sauté to let the tare form.
Mix in the sauce – Once the aromatics have been sauteed and the aroma of the tare has formed. Add in the soy sauce, oyster sauce, doubanjiang, sugar, and chicken stock, and fully mix together. Let simmer for 1-2 minutes or until well mixed together.
Cook the noodles – Fill a saucepan with water and bring to a boil. Add in the noodles and cook for 2-3 minutes or until done. Strain and add into a bowl.
Assemble the noodle bowl – Add the chicken mixture on top. Then layer the chives, green onions, bonito flakes, and seaweed. Add a small indent and add the poached egg. Enjoy your delicious chicken mazemen.
