Dakdoritang Chicken Noodles
A new spin on a Dakdoritang, which is traditionally a stewed Chicken dish, Dakdori Chicken Noodles captures the same flavor from the classic favorite in dry noodle form with a calorie conscious, protein forward twist.

- ½ Serving Green tea noodles (Or noodles of choice)
- 4 oz Chicken thigh (Boneless, skinless)
- 1-2 Mushrooms (Enoki, Baby Bella, or any)
- 1 Carrot (Sliced)
- 1 tablespoon Doenjang
- 1 tablespoon Gochujang
- 1 tablespoon Soy sauce
- 1 tablespoon Mirin
- 2 cloves Garlic
- ¼ Onion (Chopped)
- Scallions and furikake (For garnish)

Cut the chicken into bit size pieces and mix with all the ingredients (except for the green tea noodles). Marinate for at least 30 minutes to overnight.
Prepare poached egg. I did this via the sous vide method — check out this article to see How to Make the Perfect Sous Vide Poached Eggs . Cook noodles according to instructions on package and set aside.
Using a cast iron grill, cook the chicken mixture until done, about 3-4 minutes each side.
Top green tea noodles with chicken and poached egg and enjoy!
