If you're a fan of deliciously rich, tomato based pastas and the complex flavor of truffles, you're in for a treat with this low calorie chicken pasta recipe. Featuring Truff's Arrabbiata sauce, amped up with protein via the chicken, this pasta is both delicious and healthy -- the best of both worlds.
How to Eat Pasta and Lose Weight
I've been incorporating pasta frequently into my weekday diet and have been seeing great results in my fitness journey. By portioning ingredients appropriately, especially those that are more calorie dense, I'm able to make pasta dishes, such as this low calorie chicken pasta, that fit my calorie budget and have the right macros too! Here's what I use to make this recipe only 325 calories:
- Low calorie pasta from Fiber Gourmet -- this is about 50% less calories than traditional pasta for the same serving size (2oz). You can easily order your Fiber Gourmet pasta through Amazon as well.
- Used only ¼ cup of the Truff Arrabbiata sauce (~75 calories) -- this sauce is so deliciously flavor and a treat for those who love truffles!
- Limited cheese usage to 1 teaspoon -- the sauce itself already packs a great flavor
- Weighted out 3-4oz of Chicken (boneless skinless) to amp up the protein content of this dish
- As always, I used cooking spray instead of oil to limit calories from oil

Tips and Tricks
Want to add an extra kick?
Add in 1 (or more of you dare) Thai chilis. If you don't have Thai chilis, red pepper flakes work as well.
Sauce reducing too much?
Reserve some pasta water (I usually keep about ¼ cup) and sprinkle some in slowly until the sauce reaches the desired consistency.
What if I only have normal pasta?
You can definitely still use normal pasta! Just keep in mind that normal pasta is 100 calories more for the same portion size which would make this recipe 425 calories instead - which still makes it a very calorie conscious meal
Ingredients
- 2oz Fiber Gourmet pasta
- 4oz Chicken thigh (Boneless, skinless)
- ¼ cup Truff Arrabbiatta sauce
- 1 clove Garlic
- ⅓ Red onion, minced
- 1-2 Mushrooms
- 1-2 Thai chilis (Optional: Adjust based on spice tolerance)
- 1 teaspoon Parmesan cheese
- Salt, pepper, and paprika (For chicken seasoning)
- Basil (For Garnish)
Putting the Pasta Together
- Begin by cooking pasta in salted water for about 7 minutes.
- In the meantime, begin to prepare the sauce and chicken. Cut chicken thigh into bite sized pieces and season with salt, pepper, and paprika.
- Using cooking spray, saute the garlic, mushrooms, and red onion in a pan. Season with salt, pepper, and red pepper flakes.
- Add in the chicken pieces and cook a single layer, about 3 minutes on each side.
- Once the chicken is done, change heat to low and add in the sauce. Save some pasta water, drain the pasta, and add the pasta into the sauce, adding in pasta sauce as needed until the sauce reaches the desired consistency.
- Remove from heat, top with parmesan cheese and basil, and enjoy your delicious low calorie chicken pasta!
