    Healthy Rose Pasta (Low Calorie Pasta Series)

    This rose pasta is definitely my kind of rosé -- the creamy tomato sauce paired with the chewy malfadine noodles and topped with parmesan cheese make a mouthwatering combo that I can't get enough of. I was also able to make this under 400 calories with careful portioning of ingredients.

    To make the skinny spicy rigatoni Fitsian friendly, I keep portion control of highly caloric ingredients in mind. For the pasta itself, I make only 1 serving (55g in this particular pasta’s case -- get a food scale to be able to measure things accurately!) I also only used ¼ tablespoon of butter (25 calories) and 1 tablespoon of heavy cream (50 calories).

    💡Tips and Tricks

    What is malfadine and where can I get it?

    Malfadine is similar to a long, skinny lasagna noodle. I love the look and texture of the pasta. I've had luck finding them in Italian delis and some grocery stores. You can also order them online at Doris Italian Market.

    Remember to save pasta water

    It's especially important for this pasta recipe given that the sauce can be very viscous and will need some water to help spread the texture throughout the noodles.

    📋 Ingredient Notes

    • 55g of Malfadine (Or Pasta of choice)
    • 1 clove garlic
    • 1-2 Thai chilis (Based on spice tolerance)
    • ¼ Red onion (Minced)
    • 2 tablespoon Tomato paste
    • 1 tablespoon Heavy cream
    • 1 tablespoon Parmesan cheese
    • Pasta water (As needed)
    • Salt, pepper, red pepper flakes
    • Scallions (for garnish)

    🔪 Step by Step Instructions

    1. Cooked 1 serving of pasta (~200 calories) in boiling salted water.
    2. In a skillet, spray cooking spray and sauté garlic, chopped red onions, and Thai chilis if using.
    3. Once veggies have softened, add in tomato paste and cook until not raw.
    4. Add in heavy cream and stock and mix sauce thoroughly.
    5. Add in pasta and pasta water if needed and mix thoroughly at a lower heat.
    6. Chop scallions and top the pasta. Then top with parmesan and season with salt, pepper and red pepper flakes as desired.
