    Roasted Sweet Chili Thai Brussels Sprouts Recipe

    A delicious healthy side dish that is great to pair with your next dinner party, these umami roasted Thai brussels sprouts will be a hit at your next dinner party. 

    This recipe will show you 3 different ways to make this recipe – with an oven, air fryer, or on the stovetop.

    💭 What Are Thai Brussels Sprouts?

    Thai brussels sprouts consist of crispy brussels sprouts tossed in delicious Thai flavors such as fish sauce, and Thai sweet chili sauce, making a mouthwatering savory combination. This is one of my favorite recipes to bring to holiday dinner. After all, who doesn't love a great roasted vegetable dish?

    🍎 Are Brussels Sprouts Healthy?

    Brussels sprouts are a very healthy vegetable – a half cup of brussels sprouts only has 25 calories and packs 2 grams of fiber.

    Additionally, Brussels sprouts are packed with vitamins that are necessary for essential bodily functions such as blood clotting and bone health. 

    These Thai brussels sprouts are a great way to round out a protein dish, such as this Thai Basil Chicken or Five Spice chicken.

    📋 Ingredient Notes

    Brussels Sprouts – These miniature cabbages are the key base of this dish.

    Fish Sauce – A key ingredient for that delicious signature Thai flavor. Don’t be put off by the smell! I would not recommend omitting this ingredient, and there are not really any good substitutes. You can easily pick up fish sauce at most major grocery stores or order from Amazon. Three Crabs Fish Sauce is my favorite brand. 

    Thai Sweet Chili Sauce – This is a typical sweet chili sauce common in Thai cuisine. You can find it at your local Asian market or online. If you don't have any, feel free to substitute with some maple syrup or brown sugar, but the flavor won't quite be the same.

    Cashews – Adds some crunch to the dish. You can also opt to use peanuts, or omit them. 

    Lime wedges (Optional) – Garnish with some lime wedges and drizzle them over the Thai brussels sprouts for some freshness

    📖 Substitutions and Variations

    Thai chilis for spicier sauce – Use 1 for a mild spice, and 2-3 for a heavier kick.

    Peanuts instead of cashew – Peanuts are a great substitute for cashews as a garnish.

    Crispy garlic and shallots – Another great topping for some additional crunch.

    Make it okonomiyaki style – Make it Japanese style with some okonomiyaki toppings.

    White pepper – Sprinkle with some white pepper before roasting for an extra infusion of Thai flavors

    🔪 Step by Step Instructions 

    Oven Roasted

    Preheat the oven – Let the oven preheat to 425 F while you’re preparing the brussels sprouts. 

    Cut the brussels sprouts – Cut the brussels sprouts into halves or quarters. 

    Cut the brussels sprouts into halves.

    Season the sprouts – In a mixing bowl, mix the brussels sprouts with oil, fish sauce, salt, and the sweet chili sauce. Toss until everything is coated thoroughly. 

    Season the brussels sprouts in a bowl.

    Roast the brussels sprouts – Add the brussels sprouts in a single layer on a sheet pan. Put in the oven and let make for about 20-25 minutes, or until the brussels sprouts are crispy.

    Add the garnishes – Add the brussels sprout onto a plate or serving bowl and garnish with crushed cashews and red pepper. Drizzle with additional sweet chili sauce and lemon juice if desired, and serve.

    Air Fryer

    Preheat the oven – Let the oven to preheat 425 F while you’re preparing the brussels sprouts. 

    Cut the brussels sprouts – Cut the brussels sprouts into halves or quarters. 

    Season the sprouts – In a mixing bowl, mix the brussels sprouts with oil, fish sauce, salt, and the sweet chili sauce. Toss until everything is coated thoroughly. 

    Air Fry the brussels sprouts – Line the air fryer basket with parchment paper. Add the brussels sprouts in a single layer in the basket and air fry at 370F for 7 minutes. Open the air fryer basket, flip the brussels sprouts, and air fry for another 7 minutes.

    Add the garnishes – Add the brussels sprout onto a plate or serving bowl and garnish with crushed cashews and red pepper. Drizzle with additional sweet chili sauce and lemon juice if desired, and serve.

    Stove Top

    Cut the brussels sprouts – Cut the brussels sprouts into halves or quarters. 

    Season the sprouts – In a mixing bowl, mix the brussels sprouts with oil, fish sauce, salt, and the sweet chili sauce. Toss until everything is coated thoroughly. 

    Roast the brussels sprouts on a cast iron – Put a cast iron skillet on the stove and turn the heat up to medium-high heat. Once the cast iron is heated, add the brussels sprouts in a single layer. Cook for about 10 minutes, tossing the brussels sprouts halfway through to make sure they’re cooked thoroughly.

    Add the garnishes – Add the brussels sprout onto a plate or serving bowl and garnish with crushed cashews and red pepper. Drizzle with additional sweet chili sauce and lime juice if desired, and serve.

    💡Expert Tips

    Line the parchment paper on the air fryer – This will make cleaning the air fryer significantly easier. In most cases, it will just be a matter of throwing out the parchment paper. 

    Roast the brussels sprouts in a single layer – Not doing so will result in inconsistent roasting. Make sure to lay in a single layer with some space in between. 

    💭 Recipe FAQs

    Why are my brussels sprouts still hard?

    If your brussels sprouts are still hard, it's likely they haven't been roasted for long enough. Add them back into the oven, air fryer, or cast iron for a couple of minutes at a time, and check in on them regularly until they've reached the desired crispness.

    How do I cut brussels sprouts?

    Cut them lengthwise and cut off the bottoms. If a particular sprout is too big, cut it into quarters to ensure consistency in roasting.

    How do I store the leftovers?

    You can store these Thai brussels sprouts in an airtight container in the fridge for up to 3 days.
    If you’re making this ahead of time for a holiday party, hold off on the garnish. Add the garnish and some additional sweet chili sauce before serving.
